Bitterness is a signal. How to balance it:

  • Baseline recipe: 20 g in, 36 g out, 27–30 s.
  • If the shot runs longer than 30–32 s — make the grind coarser.
  • If time is normal but flavor is still bitter — lower brew temperature by 1 °C or adjust yield by 1–2 g.
